You're familiar with Miguel Santana's cooking if you've been to Northside Social or Battery Park Saloon or -- in the more distant past -- Benvenuti. He learned his culinary skills in Miami, in his Puerto Rican mother's kitchen, and then in classical French kitchens, which more or less brings us to the present moment: Miguel's Southern Kitchen. Wide open and much more shiny slick than expected, Miguel's offers a small menu of dishes you know -- jambalaya, red beans and rice, meatloaf (complete with ketchup glaze), collard greens and pecan pie. Come in for a quick lunch or dinner. Miguel will be there, urging you toward meatloaf, ready to pit his collard greens against even the most well-loved, way-back-in-the-family-tree recipe.
